Easy Chicken and Cauliflower Veggie Rice Stir Fry


Happy Tuesday friends!  I hope you all enjoyed the nice long weekend with your family.  I wanted to share with all of you this quick and easy dish I shared on my insta stories last week...Easy Chicken and Cauliflower Veggie Rice Stir Fry.  I had so many of you ask about it, I thought I would create a blog post for easy reference.  Like many of you, I am making healthier lifestyle changes for 2020 with exercise and diet being at the top of my list.  One easy swap I have found is using cauliflower rice instead of regular rice.  Rice is just loaded with calories and carbs which can quickly sabotage any diet.  I discovered steam cauliflower rice last year and have been slowly trying different varieties.  The Green Giant Cauliflower Veggies has turned into a quick favorite for me and can't wait to use it in more meals!!  One entire bag is only 75 calories with ZERO carbs.

Ingredients:
  • 1 bag of Green Giant Cauliflower Veggies
  • 1/4 Cup Chopped Onion
  • 1-2 Chicken Breasts
  • 1 Tbsp Olive Oil
How to Make It:

Pop the bag of cauliflower rice into the microwave for six minutes, while this is cooking, saute the onions in olive oil until lightly caramelized.  Defrost the boneless chicken breasts and cut them up into bite size pieces.  In a stove top skillet, cook your chicken until the chicken is cooked thoroughly.  As a quick and easy alternative for this particular meal, I used pre-cooked chicken fajita strips.  Just defrost them in your microwave before adding them to your pan.  Once your chicken is fully cooked, stir in your bag of cauliflower rice and veggies.  Sprinkle with salt and enjoy!
